Radicchio Salad with Asian Pear, Bacon & Pomegranate (1)
Serves 6
Ingredients
For the salad:
½ medium head radicchio
½ medium head butter lettuce
½ large Asian pear, cored and diced
4 pieces bacon, cooked and crumbled
½ cup pomegranate arils (if not in season use fresh raspberries for a splash of color)
For the dressing:
1 medium shallot, minced
2 tablespoons honey
2 tablespoons fresh-squeezed lemon juice
2 tablespoons extra-virgin olive oil
½ teaspoon kosher salt
Preparation
Wash and thoroughly dry the radicchio and butter lettuce. Thinly slice the radicchio and tear the butter lettuce into bite-sized pieces.
Arrange the butter lettuce and radicchio on a large platter or in a large salad bowl. Top with Asian pear, bacon, and pomegranate.
Whisk all the ingredients for the salad dressing together in a medium bowl. Drizzle the dressing over the salad and serve.
