Grilled Chicken with Dijon Marinade

Serves 4-6


4-6 chicken breasts, skinned, boned, washed and patted dry
1 cup Chardonnay
2 T Dijon mustard
Freshly ground pepper—to taste
1 t Kosher salt
fresh herbs, chopped fine (rosemary, sage, thyme are my favorites)
¼ C Olive oil (doesn’t have to be extra virgin)


Combine everything but the chicken in a bowl and whisk until blended. Place chicken breasts in Ziplock bag and pour in marinade. Put in refrigerator for 1 hour or more (up to 8 hours). Season grill with olive oil and heat to medium high. Take out chicken and place on grill. Usually 3-4 minutes on each side is enough for juicy chicken. Pour marinade in bowl and brush on chicken once during grilling. Serve with your favorite pasta or rice dish, salad and fresh bread.
