Green Grape Gazpacho

Serves 12


1 ½ lbs Green grapes seedless

12 ounces English cucumber, peeled, seeded and rough chopped

¼ cup white onion rough chopped

1 garlic clove, medium

1 ¼ cups plain yogurt

1 ½ T apple cider vinegar

1 cup (maybe a bit more) sparkling wine

1 ¼ cups sliced almonds

Salt and white pepper to taste


Take all ingredients and place in a large container, mix and refrigerate overnight .  In batches purée in a VitaMix or blender until smooth. Strain through a medium sieve and adjust the seasoning (salt, pepper and vinegar). 

If the soup is to thick, either add milk or more sparkling to get to the consistency that you want.
