Pan-Seared Filet Mignon with Blue Cheese Butter

Ingredients

  • 4 filet mignon steaks (1 1/2 inches thick)
  • Salt and pepper to taste
  • 4 tablespoons unsalted butter, softened
  • 1/4 cup crumbled blue cheese
  • 1 tablespoon fresh chives, chopped

 

Side Dish:

  • Roasted Brussels sprouts with bacon
  • Creamy Parmesan polenta

Preparation

  • Season the filet mignon steaks with salt and pepper on both sides.
  • In a small bowl, combine the softened butter, crumbled blue cheese, and chopped chives to make the blue cheese butter. Set aside.
  • Heat a large skillet over medium-high heat and add a drizzle of olive oil.
  • Add the steaks to the skillet and sear for about 4-5 minutes per side for medium-rare, or adjust the cooking time to your preference.
  • Remove the steaks from the skillet and let them rest for a few minutes.
  • Top each steak with a generous dollop of blue cheese butter.
  • Serve with roasted Brussels sprouts with bacon and creamy Parmesan polenta on the side.
