Grilled Tri-Tip Steak with Smoky Chipotle Sauce

  • 2 pounds tri-tip steak
  • Salt and pepper to taste
  • 1/2 cup ketchup
  • 2 tablespoons adobo sauce from canned chipotle peppers
  • 1 tablespoon honey
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon smoked paprika

  • Garlic-herb roasted potatoes

Preparation

  • Season the tri-tip steak with salt and pepper on both sides.
  • Preheat the grill to medium-high heat.
  • In a small bowl, combine the ketchup, adobo sauce, honey, apple cider vinegar, and smoked paprika to make the smoky chipotle sauce. Set aside.
  • Grill the tri-tip steak for about 6-8 minutes per side, or until medium-rare. Adjust the cooking time based on your desired doneness.
  • Remove the steak from the grill and let it rest for a few minutes.
  • Slice the steak against the grain and serve with a drizzle of smoky chipotle sauce on top.
  • Serve with a grilled corn and black bean salad and garlic-herb roasted potatoes on the side.
