Grilled Skirt Steak with Cilantro-Lime Butter

Ingredients

  • 2 pounds skirt steak
  • Salt and pepper to taste
  • 1/4 cup fresh cilantro, chopped
  • Zest and juice of 1 lime
  • 4 tablespoons unsalted butter, softened
  • 2 cloves garlic, minced

  • Grilled corn on the cob with chili-lime butter
  • Mexican rice

Preparation

  • Season the skirt steak with salt and pepper on both sides.
  • Preheat the grill to medium-high heat.
  • In a small bowl, combine the chopped cilantro, lime zest, lime juice, softened butter, and minced garlic to make the cilantro-lime butter. Set aside.
  • Grill the skirt steak for about 2-3 minutes per side, or until medium-rare.
  • Remove the steak from the grill and let it rest for a few minutes.
  • Slice the steak against the grain and serve with a dollop of cilantro-lime butter on top.
  • Serve with grilled corn on the cob with chili-lime butter and Mexican rice on the side.
