Grilled Ribeye with Gorgonzola Butter

  • 4 ribeye steaks (1 inch thick)
  • Salt and pepper to taste
  • 4 tablespoons unsalted butter, softened
  • 1/4 cup crumbled Gorgonzola cheese
  • 1 tablespoon fresh chives, chopped

  • Grilled balsamic-glazed vegetables (such as bell peppers, zucchini, and red onions)
  • Wild rice pilaf

Preparation

  • Season the ribeye steaks with salt and pepper on both sides.
  • Preheat the grill to medium-high heat.
  • In a small bowl, combine the softened butter, crumbled Gorgonzola cheese, and chopped chives to make the Gorgonzola butter. Set aside.
  • Grill the ribeye steaks for about 4-5 minutes per side for medium-rare, or adjust the cooking time to your preference.
  • Remove the steaks from the grill and let them rest for a few minutes.
  • Top each steak with a generous dollop of Gorgonzola butter.
  • Serve with grilled balsamic-glazed vegetables and wild rice pilaf on the side.
