Grilled Flank Steak with Chimichurri Sauce

Ingredients

  • 1 1/2 pounds flank steak
  • Salt and pepper to taste
  • 1 cup fresh parsley, chopped
  • 4 cloves garlic, minced
  • 1/4 cup red wine vinegar
  • 1/4 cup olive oil
  • 1 teaspoon dried oregano
  • 1/2 teaspoon red pepper flakes

Side Dish:

  • Grilled zucchini and yellow squash
  • Couscous with roasted vegetables

Preparation

  • Season the flank steak with salt and pepper on both sides.
  • Preheat the grill to medium-high heat.
  • In a small bowl, combine the parsley, garlic, red wine vinegar, olive oil, dried oregano, and red pepper flakes to make the chimichurri sauce. Set aside.
  • Grill the flank steak for about 4-5 minutes per side for medium-rare, or adjust the cooking time to your preference.
  • Remove the steak from the grill and let it rest for a few minutes.
  • Slice the steak against the grain and serve with a generous spoonful of chimichurri sauce on top.
  • Serve with grilled zucchini and yellow squash and couscous with roasted vegetables on the side.
