Seedless watermelon, cut into 1 inch cubes to equal to 4 cups of fruit, rind discarded
1 cup pitted Kalamata olives, sliced in half lengthwise
1 large red onion, sliced thinly into rings
1 bunch cilantro, leaves rinsed and separated from stems—use as much as the bunch or half a bunch, depending on how much you like cilantro
1-2 heads red leaf lettuce, washed thoroughly and torn into bite-sized pieces
¼ cup balsamic vinegar
½ cup extra virgin olive oil
Kosher Salt, Freshly Ground Pepper
Whisk together and emulsify.
Feta Cheese crumbles
Assemble salad ingredients by layering them on a large deep platter: lettuce, onion, cilantro, olives and watermelon cubes. Drizzle the dressing over the salad, add the options of feta cheese and balsamic syrup over all and serve.
