Two parts to the recipe: the vegetables then the dressing.
1 medium Napa cabbage, rinsed, cored and chopped
2 carrots, peeled, trimmed
6 green onions, trimmed and sliced
1 large red bell pepper, seeded, cored, sliced thinly
½ cup cilantro, rinsed well and chopped
¼ cup sliced, toasted almonds
Add these to a large bowl.
1/3 cup Trader Joe’s Orange Muscat Champagne Vinegar
1/8 cup Balsamic Vinegar (I had Pomegranite Balsamic on hand and it worked too)
1/8 cup low sodium soy sauce
1 tablespoon sesame oil
3 Tablespoons olive oil
1 teaspoon dry mustard
Freshly Ground black pepper to taste
Whisk together in a small bowl and, just before serving, pour over salad and toss.
