Kitchen tip: massaging kale helps to make it more tender and less bitter.
1 bunch kale & a large pinch salt
1/2 red onion, chopped
1/2 cup walnuts, chopped
1/2 cup crumbled feta cheese
3 Tbs. olive oil
2 Tbs. apple cider vinegar
2 Tbs. lemon juice
Salt and pepper to taste
Prepare kale: rinse, remove stems and chop into strips. Place in a bowl. Sprinkle with a large pinch of salt. Massage salt into the kale for 3-5 minutes. The kale will appear darker in color and slightly wilted when you are done.
In a large salad bowl, combine kale with remaining ingredients: chopped red onion, walnuts, and feta cheese.
Prepare dressing. whiske together in a small bowl: olive oil, apple cider vinegar, and lemon juice. Toss salad with dressing. Add salt & pepper to taste.
