An easy mid-week meal and you can use either lean ground beef or turkey. If you want to spice it up, add a teaspoon of Chipotle Chili Powder.
1 lb lean ground beef or one package lean ground turkey
1 onion, chopped
1 T olive oil
2-3 T chili powder
2 t ground cumin
½ t granulated garlic or one garlic clove minced fine
1 14 ½ oz can chopped tomatoes
1 15 oz can corn, drained
1 small can sliced black olives, reserve 2 T olive brine
1 cup cornmeal
Preheat oven to 375. Have a 9 x 13 metal or pyrex pan ready.
In a large frying pan, heat to medium high, add olive oil. After 1 minute, add chopped onion. Saute for 5 minutes or until browned. Add ground turkey and cook until no more pink is in the meat. Add spices, tomatoes and corn. Cook on medium for 20 minutes, stirring occasionally.
In a small bowl, scramble eggs, add olive brine and cornmeal and mix well. Add olives and cornmeal mixture to the pan and combine. Cook another 5 minutes. Pour into pan and bake for 25-30 minutes or until browned and set.
