A great recipe from one of my favorite recipe sites:

Makes 8 shish kebabs


1 pound chicken breast fillets trimmed of fat, cut into 2 cm (1") cubes c

Moroccan lemon marinade

1 teaspoon chopped parsley

1 teaspoon Fresh rosemary leaves

2 teaspoons fresh thyme leaves

2 cloves garlic, crushed

1 teaspoon black peppercorns, crushed

1 grated rind (zest) and juice of lemon

2 teaspoons olive oil

8 Bamboo skewers, soaked in water for 1/2 hour-this will prevent scorching.


The chicken breast fillets trimmed of fat, cut into 1" cubes; in a large bowl or zip lock bag mix marinade and add chicken; marinate for 30 minutes to 1 hour in refrigerator. Thread onto skewers and grill over medium-high heat, about 4 minutes total or until cooked through.
