1tbs. olive oil

6-8 small zucchini, chopped

1 medium red onion, chopped

1 bunch of broccoli, chopped

1 large red onion, chopped

1 cube of butter

1 small loaf sourdough bread – torn into bite sized pieces

2 cups shredded cheddar or pepper jack cheese

10 eggs

Salt & pepper to taste



Sauté zucchini, broccoli and onion in olive oil until tender.

Melt butter, add bread and stir until well coated.

Beat the 10 eggs together.

Mix vegetables, eggs and cheese together.

Pour into a large glass baking dish.

Pour bread mixture over top of egg mixture, pressing bread into the mixture.


Bake 30 minutes at 350 degrees, bread should brown nicely
