This is a re-creation of Julia Pedroncelli's Bollito or Boiled Beef. It is very simple and a great accompaniment for a glass of red wine.

Serves 2-3

Ingredients:

3 Beef Short Ribs

1 large onion, chopped

2 medium carrots, peeled and chopped

1 cup chopped mushrooms or other vegetables like celery

5 cups of water

Preparation:

Place all ingredients in a large pot and bring to a boil. Simmer covered for 2-3 hours, until meat is falling off the bone. Season to taste with salt and pepper. Serve meat in soup or sliced with mustard.
