A yummy way to get your vegetables.
1 cup grated zucchini (about 1 medium)
1 large egg
½ medium onion, chopped fine
2 teaspoons olive oil
¼ cup grated parmesan cheese
¼ cup herbed bread crumbs
Salt and pepper
Heat olive oil in a frying pan, add onion and sauté until lightly browned. Put onion in a medium bowl to cool. After grating the zucchini, place in a dish towel and wring out excess moisture over sink. Add zucchini to onions along with the egg, cheese and breadcrumbs, stir to combine. Salt and freshly ground black pepper to taste.
Preheat oven to 400 degrees. In a mini-muffin tin sprayed with cooking spray, fill cups to top and even out. Bake for 15-18 minutes, until browned. Serve warm.
