... Salmon Mousse

An easy appetizer especially good during with water crackers or sliced baguette.

Ingredients:

1 can red salmon, drained, cleaned of bones and skin
1 package low-fat cream cheese
1 lemon
Freshly ground black pepper, to taste
Capers, chopped red onions, water crackers or sliced sourdough baguette
 

Preparation:

In a food processor, combine the salmon, cream cheese, juice of the lemon and black pepper. Pulse until combined. Scoop out onto a platter, sprinkle with capers and red onion and ring with crackers or baguette.
