Grilled Thai Prawns

Pairs Well With

Serves two

Ingredients

2 ½ T butter
1 T minced peeled fresh ginger
1/8 t cayenne pepper
1 T fresh lime juice
1 t grated lime peel
1 T minced cilantro

½ lb uncooked large shrimp
peeled and deveined
¼ cup chopped green onions
Lemon wedges

Preparation

Prepare grill (medium-low heat). Melt butter in heavy small skillet over medium heat. Stir in ginger and cayenne. Remove from heat. Stir in lime juice, cilantro, and peel. Season ginger-lime butter to taste with salt and pepper. 

Place shrimp in bowl. Add ginger-lime butter; toss to coat. Thread shrimp onto skewers. Place on barbecue and grill until pink and just cooked, about two minutes per side. Transfer to plate and slide off of skewer with fork. Sprinkle with onions and serve with lemon wedges.
